Breakfast anyone?

It’s no secret that my husband and I like to cook. We feel that food consumption shouldn't just be a necessity, it should be something enjoyed, made with love and be flavorful and memorable. Cooking and sharing our fare is a creative outlet for us. We are a good pair in the kitchen (and in life!). Cooking is a relaxing form of self-expression. Recently we welcomed family with a comforting favorite … I hope they enjoyed waking up to the house smelling of warm cinnamon and toasted walnuts. And as I sip my morning coffee and savor the last piece of our creation, I wanted to share this tasty recipe!

“Great Big Coffee Cake”

1 C sugar
1 C room temperature butter
2 eggs, beaten
3 C flour
½ tsp salt
3 tsp baking powder
1 C milk
1 tsp vanilla

Crumb Topping
1 brown sugar
2 tsp cinnamon
1 C chopped walnuts

½ C melted butter

Cream butter and sugar together, blend in eggs. Sift dry ingredients and add into mixture alternating with milk. Stir in vanilla. Pour ½ of batter in a greased 9 X 13 pan. Sprinkle ½ of crumb topping over bottom layer. Spread rest of batter into pan and sprinkle rest of crumb topping over that. Pour melted butter over entire cake and bake for approximately 35 minutes at 375. ENJOY!
